Coleslaw

1. Red and green cabbage in equal amounts, sliced

2. Red peppers-julienned

3. Green onions-chopped, including the green part

4. Black olives,sliced

5. Canned corn or fresh corn off the cob, lightly cooked

6. Cilantro, lots, chopped

The Dressing: In a food processor, mix:

1. Mayonnaise

2. Fresh lime juice

3. Seasoned rice wine vinegar

4. Canned chipolte peppers, pureed (careful, they're quite hot) plus the sauce in the can. You don't have to use them all.

5. Asian hot sweet chili sauce

6. Sugar to balance

7. Salt and pepper to taste

Red Potato Salad

1. Red potatoes, washed and cut into bite sized pieces, Place in a pot with cold water and salt. Bring to a boil, turn down the heat and simmer until just cooked. Drain well.

Mix together gently and taste for salt and pepper and vinegar balance:

1. Red onions, minced

2. Celery, minced

3. Capers, drained

4. Whole grain mustard

5. Flat leaf parsley, minced

6. Mayonnaise

7. Seasoned rice wine vinegar
